酸酸甜甜好滋味——莴笋糖醋鲤鱼

我家小胖妞是一个酷爱吃肉的小盆友,各种肉肉她都喜欢吃,尤其对于鱼和虾有一种超乎常人的爱。所以,每一次,鱼和虾无论怎么做,她必定都是吃得有滋有味,还会非常给面子地不时夸奖几句。

就像这道糖醋鲤鱼,吃完鱼肉,最后她连盘子里酸酸甜甜的汤汁都不放过,边咂吧嘴巴边高兴地说:“太好吃了……”

Steps to make 酸酸甜甜好滋味——莴笋糖醋鲤鱼

  • 1.鲤鱼处理干净,尤其要把鱼肚子里的黑膜清理干净。沥干水分后用刀在鱼身上斜着切出花纹。
  • 2.与之前的刀法交叉,在鱼身上刻出十字花纹,但要注意别把鱼骨切断了。
  • 3.面粉加适量水和成稍稠的面糊。
  • 4.在处理好的鱼身上均匀地涂抹上面糊,沥掉多余的面糊。
  • 5.锅中加油,油热至5、6成的时候,捏住鱼尾,先把鱼头放入锅中,另一只手用铲子舀油不断地浇在鱼身上,直至面糊凝固。
  • 6.把鱼下入锅中,炸至两面金黄,捞出备用。
  • 7.葱姜蒜切末。
  • 8.莴笋去皮切成条状。
  • 9.炒锅留少量底油,下入葱姜蒜末炒香。
  • 10.下入番茄酱炒香。
  • 11.白糖、香醋、食盐、料酒、生抽、少许水调成汁,搅拌至糖和盐完全融化。
  • 12.调好的糖醋汁倒入锅中,煮沸。
  • 13.少许淀粉加少量水拌匀,成水淀粉。
  • 14.水淀粉倒入锅中。
  • 15.继续加热,并用铲子不停地搅动,直至锅中的汁水变浓稠。
  • 16.关火,把烧好的糖醋汁浇在炸好的鱼上,即可食用。酸酸甜甜,大人和小孩子都会非常喜欢的哦!
