鲫鱼炖豆腐
婆婆家的对门邻居是个新钓迷,海钓,河钓,啥都喜欢。那天,他给婆婆送来在河里钓的小鲫鱼,因为我们当地很少吃河鲜,所以,他不会做,婆婆也不会做。婆婆将鱼清洗破肚去杂,把鱼又送给了我。我拿回家后直接丢进了冷柜,因为,对于这河鱼,我也从来没做过,真的没有把握。那天,想到了用豆腐,因为炖海鱼时我就会经常加入豆腐,估计,对于河鱼,也能通用。

Steps to make 鲫鱼炖豆腐

  • 1.鲫鱼去内脏洗净加少许盐、料酒、姜、葱提前腌制(我腌了有十多个小时,放冰箱里).
  • 2.豆腐切成丁。
  • 3.锅中加适量油,加葱、姜、蒜、干红椒、花椒炸出香味。
  • 4.将腌好的鲫鱼拣掉葱姜,抹净水份,放在锅中。
  • 5.煎至两面起壳。
  • 6.加入适量水、料酒、盐,大火煮开,转中小火慢炖。
  • 7.炖至汤汁略白,转中火加入豆腐、金针菇一起同炖。
  • 8.炖至豆腐入味,汤汁奶白,关火后,加入香菜。
  • 9.加入胡椒粉调味去腥。
