今年,公公种的豇豆丰收,天天炒着吃、炖着吃,家人都吃厌了,于是,改变烹饪方法,自己腌制酸豆角,这样,既可以改变口味,又可以解决豇豆储存问题。最近,豇豆都腌制好了,就用它来炒肉丁,又下饭又好吃。

Steps to make 酸豆角炒肉丁

  • 1.将腌好的酸豆角从腌制瓶中捞出,泡入清水中一小时,中间换两次水,浸泡出部分盐分和酸味。
  • 2.将泡好的酸豆角控干,切成丁状,备用。
  • 3.将炒好的猪里脊肉切成丁状,备用。
  • 4.将剁椒准备好;葱姜蒜末准备好。
  • 5.铁锅上炉,放入适量的花生油,烧至七成热。
  • 6.将姜末和蒜末放入,爆香。
  • 7.倒入切好的酸豆角丁,中火,炒匀。
  • 8.倒入猪里脊肉丁,炒匀。
  • 9.倒入1勺生抽,调色调味。
  • 10.倒入1勺蚝油,调味。
  • 11.加少许盐及热水,中火五分钟。
  • 12.加入葱丝。
  • 13.加少许鸡精,炒匀,即可出锅。
