糖醋小排
色泽红润,酸甜可口,做起来也不难,一碗万能糖醋汁搞定,端上春节的餐桌绝对是硬菜。万能糖醋汁记住12345就行,一勺料酒,两勺酱油,三勺糖,四勺醋,五勺水。不过我用了不止五勺水,可能七八勺的样子吧,建议大家用热水开水,有利于糖的融化,再就是提示大家一定要立刻洗锅,因为汤汁里有糖,放凉后会变干变硬变得不容易清洗。

Steps to make 糖醋小排

  • 1.小肋排用冷水浸泡洗净。
  • 2.将小排放入锅中,加水和少许料酒,大火烧开。
  • 3.焯烫几秒,煮出血沫。
  • 4.将小排捞出过遍凉水。
  • 5.将小排捞出控干水分备用。
  • 6.锅中倒入适量的食用油烧至六七成热。
  • 7.下入小排炸制。
  • 8.中途翻面至两面金黄色。
  • 9.将炸好的小排捞出。
  • 10.锅中留少许底油,下入葱姜蒜爆香。
  • 11.下入小排。
  • 12.调制一碗万能糖醋汁,烹入锅中。万能糖醋汁:一勺料酒,两勺酱油,三勺糖,四勺醋,五勺水,我用了不止五勺水,大概七八勺的样子,也就是半碗多的水。最好用热水或者开水,有利于糖的融化。
  • 13.加入适量的盐。
  • 14.翻炒几下焖至收汁,撒一把熟芝麻。
  • 15.出锅装盘就可以了。
