五仁月饼
五仁月饼是各式月饼中最为著称的,因馅中有杏仁、桃仁、花生仁、麻仁和瓜子仁而得名。它具有配料考究、皮薄馅多、味美可口、不易破碎、便于携带等特点。 这种月饼,呈鼓形,边稍鼓出,花纹和字迹清晰,形状端正,不破皮,不露馅,边角分明;表面金黄色,无白点,色泽均匀,具有油脂光泽,边缘呈象牙色,底面棕红色。口味香甜,绵软带酥,有多种果仁香味。
这次做的五仁月饼非常成功,亲戚朋友都说很好吃。五仁馅月饼已经超过其它口味的月饼了。

  • 面粉40克
  • 转化糖浆180克
  • 核桃仁150克
  • 花生米120克
  • 葵花籽仁50克
  • 白芝麻50克
  • 黑芝麻50克
  • 糯米粉50克
  • 植物油90克
  • 碱水6克
  • 白糖200克

Steps to make 五仁月饼

  • 1.转化糖浆、油、碱水调匀,倒入面粉中,和成面团,饧1小时。
  • 2.花生米、核桃烤熟、黑芝麻、白芝麻、瓜子仁、葡萄干。
  • 3.把花生米压碎。
  • 4.核桃仁压碎。
  • 5.花生碎、核桃碎、瓜子仁、葡萄干、黑芝麻、白芝麻放到一起。
  • 6.面粉、糯米粉用微波炉蒸熟。
  • 7.倒入面粉拌匀。
  • 8.放入植物油、白糖和水。
  • 9.用手搓匀搓透。
  • 10.五仁馅搓到能攥起来就行了。
  • 11.做成每个60克的馅。
  • 12.把面团搓成长条,切成每个40克的剂子。
  • 13.按扁放入五仁馅。
  • 14.用手虎口慢慢向上推,最后把口收严实。
  • 15.月饼模子撒上面粉,将月饼坯子按压成型。
  • 16.从模具中取下做好的月饼。
  • 17.做好的月饼6个一盘。
  • 18.放入烤盘中,烤箱180度预热,先烤5分钟。
  • 19.取出来刷蛋黄液,再烤20分钟 。
  • 20.取出来晾凉。刚烤出来的月饼皮比较硬,凉透搁置2天就回油了。
