蜜汁叉烧包
蜜汁叉烧包,是广东特色早茶点心。以前看香港的电影电视,总会看到茶楼的片段,里面的小妹吆喝着“虾饺、叉烧包……”。我这个吃货当然是很感兴趣的啦,暂时还没机会去当地吃吃正宗的,于是就自己在家琢磨。我觉得不论是否正宗,好吃才是王道。自己做的才是最合自己胃的,而且真材实料经济实惠。

  • 白糖30g
  • 叉烧肉200g
  • 叉烧酱60g
  • 180g
  • 淀粉10g
  • 生抽8g

Steps to make 蜜汁叉烧包

  • 1.准备好所有食材;
  • 2.将面团材料中所有食材按照先液体后固体的顺序放进面包桶内,糖放四角,酵母放面粉中间,注意不要让酵母接触到下面的液体,启动和面程序和面,然后启动发酵程序发酵;
  • 3.叉烧肉切成小粒,大小随自己喜欢的口感;
  • 4.将180g水倒入锅内,再把叉烧酱也倒进去,一起边加热边搅拌均匀;
  • 5.加入生抽搅拌均匀;
  • 6.倒入切好的叉烧肉粒,搅拌均匀后,淀粉里加适量水调成淀粉水倒进去,搅拌均匀;
  • 7.煮至浓稠的状态关火,倒入碗中待用;
  • 8.面团发酵到两倍大,用手指沾一点面粉戳一个洞,不回缩就是发酵好了,揉几分钟排气;
  • 9.搓成长条后再切成一个个小剂子,压扁;
  • 10.擀出包子皮;
  • 11.放入适量馅料;
  • 12.全部包好入蒸笼,盖上盖子再二次发酵半小时左右,大火烧开后转小火蒸18分钟左右即可;
  • 13.成品,甜中带一点点咸,美味儿!
