  • 淡奶油150g
  • 细砂糖60g
  • 原味酸奶150g
  • 柠檬汁10ml
  • 吉利丁片10g
  • 牛奶50g
  • 奥利奥饼干碎100g
  • 无盐黄油50g

Steps to make 酸奶冻芝士蛋糕

  • 1.先做饼干底,将100克奥利奥饼干碎装入保鲜袋内,用擀面杖碾碎,加入50克融化成液体状的黄油拌匀。
  • 2.将拌好的饼干碎倒入6寸圆模内,压平实,放入冰箱冷藏30分钟备用。
  • 3.将软化的200克奶油奶酪加10ml柠檬汁搅拌至光滑细腻无颗粒状。(柠檬汁可以增添清新口感,如果你实在没有不加也行)。
  • 4.取5克吉利丁片放入50克牛奶里泡软,放入锅中隔温水加热至吉利丁片融化,放凉备用。(融化温度40-80度之间都可以,温度过高会影响凝胶性)。
  • 5.将放凉的吉利丁牛奶溶液倒入奶酪糊中搅拌均匀成奶酪糊。
  • 6.150克淡奶油加60克糖打发到六七成发,即出现纹路又能微微流动的状态。
  • 7.在打发好的奶油里加入150克酸奶搅拌均成酸奶糊。
  • 8.将拌匀的酸奶糊倒入奶酪糊中。
  • 9.翻拌均匀,酸奶冻芝士蛋糕糊就做好了。
  • 10.取出有饼干底的模具,将冻芝士蛋糕糊倒入模具中。
  • 11.抹平表面,放在桌面上轻轻震两下去除大气泡,蒙上保鲜膜放入冰箱中冷藏4小时以上,等芝士蛋糕糊完全凝固了。
  • 12.取出冷藏好的蛋糕,表面筛一层可可粉,脱模取出蛋糕,最后放草莓装饰即可。(表面装饰随自己喜好来就行)。
