荷花酥
花酥因形似荷花而得名,最近家里的紫薯有的多,就用紫薯做一个粉色的荷花酥,过中秋也能应应景。

  • 莲子100g
  • 玉米油500g
  • 白糖30g

Steps to make 荷花酥

  • 1.泡好的莲子。
  • 2.放入破壁机加入适量水。
  • 3.用米糊功能加工成莲子糊。
  • 4.做好的莲子糊倒入平底锅加入适量油和白糖。
  • 5.小火慢慢炒干,做成莲蓉馅。
  • 6.炒干水分即可。
  • 7.紫薯泥加入面粉。
  • 8.用手搓匀。
  • 9.搓匀后过筛备用。
  • 10.过筛后的紫薯面粉分两份一份多一些,一份少一些,多的里面加的盐,用来做油皮面团。
  • 11.加入清水边加边搅,拌成絮状。
  • 12.油皮面用清水拌成絮状后加入适量油拌匀。
  • 13.揉成一个光滑的紫色面团,装保鲜袋松弛1小时。
  • 14.剩下的一份紫薯面粉加入食用油做成油酥。
  • 15.做好的油酥备用。
  • 16.油皮面团松弛好取出揉光。
  • 17.包上油酥。
  • 18.擀成厚片。
  • 19.反复折叠擀开,这样做出层次感。
  • 20.用瓶盖刻出圆形面片。
  • 21.包上做好的莲蓉馅。
  • 22.做好的揉圆上面切米字格。
  • 23.锅里倒油加热。
  • 24.油温5成热放入荷花酥,小火慢慢炸。
  • 25.炸至浮起表面微微裂开就可以了。
  • 26.荷花酥做好了。
