月饼馅——果仁芝麻馅
模具:63克月饼模 可做10个月饼

月饼皮材料:面粉100克、转化糖浆70克、花生油30克、枧水1.5克、炒熟的糯米粉、鸡蛋液、果仁芝麻陷400克

果仁150克(核桃、花生、松子、杏仁、瓜子)

  • 细砂糖40克
  • 麦芽糖40克
  • 糯米粉50克
  • 面粉50克
  • 花生油30克
  • 凉白开水45克

Steps to make 月饼馅——果仁芝麻馅

  • 1.准备好材料,松子剥壳备用;
  • 2.小火将糯米粉和面粉炒熟放凉备用;
  • 3.继续小火炒香黑芝麻和杏仁;
  • 4.将核桃、花生、瓜子分别放入烤箱烤熟放凉,花生可以去皮;
  • 5.适量的果仁放入搅拌机搅碎,和没有打碎的拌拌匀,也可以放入保鲜袋用擀面杖擀碎;
  • 6.果仁碎中加入细砂糖;
  • 7.再倒入花生油;
  • 8.继续加入麦芽糖拌匀;
  • 9.倒入炒熟的糯米粉和面粉翻拌均匀;
  • 10.凉白开慢慢的加入,边加边搅拌差不多到能揉成团半小时不散开的状态;
  • 11.拌好的果仁馅可以揉成团;
  • 12.均匀的分成40克每个的样子,可以分成10个左右备用;
