红丝绒蛋糕Red Velvet Cake的起源,众说纷纭,富有戏剧性的说法是,起源于纽约的Waldorf-Astoria酒店,1959年左右,一位女客人在酒店用餐,享用到了红丝绒蛋糕,她对蛋糕非常感兴趣,于是向酒店索要蛋糕师的名字以及蛋糕配方,酒店满足了她的要求。之后,她收到了一份高额账单,原来酒店并不是无偿告知蛋糕配方,这位女客人一怒之下,向全社会公布了红丝绒蛋糕的配方,红丝绒蛋糕从此闻名全世界。

  • 鸡蛋4个
  • 牛奶40克
  • 白砂糖40克
  • 食用油40克
  • 玉米淀粉5克
  • 红曲米粉8克
  • 低筋面粉42克
  • 食盐1小撮
  • 柠檬汁4~5滴
  • 白砂糖20克
  • 淡奶油170克

Steps to make 红丝绒蛋糕卷

  • 1.备好食材,将蛋清与蛋黄分离
  • 2.牛奶+芥花油拌至乳化状
  • 3.筛入红曲粉、玉米淀粉及低筋面粉后拌匀
  • 4.逐个加入蛋黄
  • 5.拌成细滑面糊、放一旁备用
  • 6.蛋清中放入食盐、柠檬汁
  • 7.稍打一会后、一次性倒入白砂糖
  • 8.打至湿性发泡、出现大弯钩状
  • 9.取1/3蛋白糊至蛋黄糊中拌匀
  • 10.再回倒至蛋白盆中
  • 11.快速又轻盈地拌匀
  • 12.倒入垫有油布的金盘中轻轻晃动四周、让蛋糕糊均匀流淌后震出大气泡
  • 13.送入预热好的烤箱中层:180度、上下火
  • 14.烤18分钟左右
  • 15.取出金盘从30CM左右高度轻震二下
  • 16.虚盖油纸迅速倒扣至烤网上,轻轻地撕去油布
  • 17.芒果洗净后切长条
  • 18.淡奶油+20克白砂糖打发
  • 19.将蛋糕的正面向上、抹上淡奶油、放入芒果条
  • 20.借助擀面杖卷起、放冰箱冷藏定型
  • 21.吃前切块既可
