糖醋排骨

  • 白砂糖1匙
  • 料酒1勺子
  • 白醋2勺子
  • 冰糖2.5勺子

Steps to make 糖醋排骨

  • 1. 猪排骨切段洗净,冷水下锅,排骨焯水。焯水后的排骨捞出洗净。
  • 2.备好姜、葱、蒜、八角、桂皮、香叶。
  • 3.倒入半锅铲油,待油热后,放入配料姜、葱、蒜、八角、桂皮、香叶,大火爆香。
  • 4.倒入焯过水的排骨,大火炒至稍微焦黄,配料香气入味即可,盛出放好。
  • 5.洗锅,热锅,倒入半锅铲油,待油热后,倒入2.5勺子冰糖。
  • 6.中火,搅动冰糖熬制融化至棕褐色(记得要不停地搅动,否则糖会炒焦)即可。
  • 7.倒入炒香的排骨,中火将排骨挂上糖色。
  • 8.倒入半碗水,淹至排骨大半即可(方便后续煮至浓稠)。加入1勺子料酒,盖上锅盖中火煮10分钟,5分钟翻一下排骨。调至大火,翻炒排骨,直至汁水浓稠,沿锅边倒入2勺子白醋,大火将酱汁挂满排骨即可。
