中秋食谱——炫彩印花冰皮月饼

  • 1.把所有材料依次全部倒入大碗中,用手动打蛋器搅拌均匀
  • 2.然后倒入陶瓷碗中,包上保鲜膜(防止蒸的过程中太多热水流进面糊里,如果面糊水分太多,冰皮会很粘)
  • 3.烧开一锅水,把冰皮面糊放进蒸锅中,电磁炉使用爆炒功能270度蒸30分钟,直到看不见面糊熟透为止
  • 4.冰皮面糊出锅之后为了让它能均匀散热,用刮刀划散它,放一旁冷却。(取出面糊时一定要戴防烫手套)
  • 5.只要不是很烫手就可以揉面团了,揉至表面光滑有弹性就可以了。(一定要带上手套防粘
  • 6.接下来我们来炒糕粉,糕粉其实就是炒熟之后的糯米粉,小火炒到粉有点发黄就可以了
  • 7.将冰皮分为25g一个的小剂子,正好可以分出来12个
  • 8.将月饼馅也分成25g一个的小剂子,分出来12个,揉成圆球状。(做50g的月饼,皮和馅的比例为1:1)
  • 9.将糕粉倒在硅胶垫上
  • 10.取一个冰皮的剂子,用手掌按压成圆形的面皮
  • 11.将月饼馅放在面皮上,把月饼馅放在面团里,用虎口往上推面团,借住手掌肉往上慢慢推,直至皮全部包住馅为止
  • 12.将成团的月饼球,拿出放在手中揉搓。一边整形,一边将糕粉均匀沾满月饼球
  • 13.把月饼球放进月饼模具里面,然后将月饼模具放在硅胶垫上,用力一压就可以印出漂亮的花型了
