毛豆烧鸭
小时候家里养过鸭子,鸭蛋常吃,鸭肉却不常吃。因为鸭子是养来生蛋的,非特殊情况是不舍得杀掉吃肉的,所以吃鸭肉的机会很难得,除非逢年过节。
最近毛豆大量上市,新鲜的毛豆即便是用盐水水煮,也非常的美味。记得小时候妈妈会用自家种的新鲜毛豆和鸭肉一起烧。豆子煮到软烂,吸足了肉汁,也变的非常好吃。鸭肉经过焯水,煸炒,颜色红亮,不腥不腻。

Steps to make 毛豆烧鸭

  • 1.主料备用。
  • 2.配料备用。
  • 3.鸭肉清洗干净,斩成块状。
  • 4.鸭肉焯水,然后冲洗干净。
  • 5.热油锅,下入焯好的鸭块。
  • 6.将鸭肉炒制黄色微焦,沥出锅肉多余的油(鸭肉比较肥,容易出油)。
  • 7.下姜蒜片爆出香味后放八角和干辣椒煸炒。
  • 8.沿锅边淋入料酒、老抽,加入史云生浓醇高汤调味汁两匙炒匀。
  • 9.倒入适量开水,烧开后调中小火,盖上焖。
  • 10.剥好皮的毛豆,清洗干净。
  • 11.鸭肉焖50分钟左右,放入毛豆。
  • 12.再盖上烧至鸭肉和毛豆软烂,调入适量的盐即可。
