海参滋补汤
“参翅八珍”中海参居于首位,被视为筵上珍品。但是海参本身滋味平平,很不容易入味儿。正因为海参本身没有味道,所以制作海参的要点就是要让海参入味。清代美食家袁枚在《随园食单》中写道:“海参无味之物,沙多气腥,最难讨好。 ”所以赋予海参鲜美的滋味,是烹饪海参的关键。

Steps to make 海参滋补汤

  • 1.准备好食材。
  • 2.将泡发的海参洗净,切成圈备用(注意保留珍贵的金黄色海参内筋)。
  • 3.将腔骨焯烫一遍,再次洗净。
  • 4.全部食材放入煮锅中,一次性加足适量的清水,姜和料酒,小葱。
  • 5.盖上锅盖,大火煮滚,之后改小火慢炖两个小时。(电炖锅需要4个小时。
  • 6.出锅时放入适当的胡椒粉和香葱,枸杞,放盐调味即可。
