鱼香肉丝
家人都喜欢吃鱼香肉丝,但是有荤有素,在不见鱼肉的情况下还能吃出鱼的味道,而且色香味俱佳,非常下饭。
用【信任之美·】的秋木耳来做这道菜最合适不过了,木耳选用秋木耳,泡好后都是小碗状,完全没有根的木耳,而且很厚实好吃。

  • 猪梅肉300克
  • 黑木耳10克
  • 胡萝卜60克
  • 蒜苔60克
  • 郫县豆瓣酱1大勺
  • 香葱2棵
  • 生抽1勺
  • 米醋2勺
  • 3勺
  • 白胡椒粉少许
  • 1克
  • 鸡精1小勺
  • 淀粉1大勺
  • 2片
  • 3瓣
  • 料酒2大勺

Steps to make 鱼香肉丝

  • 1.黑木耳用温水泡发2-4小时,泡发后清洗干净
  • 2.猪梅肉切丝
  • 3.用手抓匀上浆后加几滴食用油抓匀腌制5分钟
  • 4.加盐1克、料酒1小勺、白胡椒粉少许、淀粉1小勺、清水1大勺
  • 5.木耳切丝
  • 6.蒜苔切丝、胡萝卜切丝
  • 7.香葱切粒,姜、蒜切末
  • 8.小碗里加入生抽1勺、米醋2勺
  • 9.糖3勺
  • 10.加适量水、一半的香葱粒、淀粉1小勺
  • 11.鸡精1小勺调和均匀备用
  • 12.热锅凉油,加热到四、五成热,放入肉丝(先不要翻动以免脱糊)
  • 13.10秒左右加入香葱粒、一半的姜、蒜碎,烹入料酒炒匀
  • 14.肉丝变成粉白色后取出肉丝备用
  • 15.原锅再加油小火下入郫县豆瓣酱
  • 16.炒出红油后加入一半的姜、蒜碎炒出香味
  • 17.下入蔬菜炒匀
  • 18.放入肉丝翻炒大约1分钟
  • 19.倒入碗汁收汁均匀即可出锅
  • 20.配上米饭,要不要来一份
