Steps to make 鱼香虾球茄子

  • 1.长茄子3根、虾8只。生抽1茶匙、白糖2茶匙、醋3茶匙、剁椒1大茶匙、大蒜4瓣、大葱15克、姜10克、白胡椒粉少许、食盐1克、水淀粉适量、面粉适量。
  • 2.先来处理鲜虾,鲜虾去头、去壳,留尾,从中间开背去虾线。
  • 3.去了虾线的虾球放入容器中,加入少许白胡椒粉、一点点食盐、少许淀粉抓匀腌渍几分钟。
  • 4.腌渍鲜虾的时候再处理小料,葱、姜、大蒜分别切末备用。
  • 5.处理好小料再处理茄子,茄子洗净,不用去皮,直接切成滚刀块备用。茄子块不要太小,油炸后会缩水。
  • 6.切好的茄子放入盆中,加入少许食盐腌渍腌渍两三分钟,然后放入两勺面粉颠匀,尽量让每一个茄子上都裹上一层薄薄的面粉。(裹上一层薄粉,炸的时候容易起硬壳,炸出来不软塌塌的,也不容易吸油)。
  • 7.炒锅置火上,放油烧至六七成热,分次下入裹好面粉的茄子炸制。(炸茄子的时候火不要太小,火越小,茄子越容易吸油)。
  • 8.茄子炸透即可捞出备用。
  • 9.锅中留底油,放入腌渍好的虾仁滑至变色捞出。
  • 10.炸好的茄子和滑好的虾仁。
  • 11.锅中留少许底油,放入剁椒、葱姜蒜末爆香。依次加入生抽、白糖。
  • 12.加入香醋。
  • 13.加入多半碗水,大火烧沸。
  • 14.锅中汁沸后放入炸过的茄子和虾球,中火烧两分钟,让虾球和茄子充分入味。
  • 15.烧至汤汁减少,用水淀粉勾芡。习惯了重色,水淀粉中放了几滴老抽调色。
  • 16.淋入芡汁后大火推炒至芡汁浓稠,基本都裹在食材上即可关火。
