五仁月饼
本来今年不打算自己做五仁馅了,但是还是有好多人喜欢吃这个口味的,今天勤快做一次。

  • 中筋面粉160克
  • 转化糖浆110克
  • 花生油28克
  • 枧水3克
  • 坚果200克
  • 蜂蜜35克
  • 150克
  • 花生油35克
  • 白酒5克
  • 炼乳10克
  • 低粉90克
  • 糯米粉90克
  • 蛋黄液少许

Steps to make 五仁月饼

  • 1.准备材料。
  • 2.低粉与糯米粉放入锅中小火炒熟(炒到颜色微微黄,有熟粉的香味就OK了)。
  • 3.把五仁馅里的材料放入盆中,炒好的粉最后放,根据馅的软硬程度添加(粉的品牌不同吸水量不同,所以粉的量不是固定的)拌匀或者戴上手套抓匀备用。
  • 4.取干净的盆放入转化糖浆和枧水,用手动打蛋器慢慢搅拌,多搅拌一会使其均匀。
  • 5.分两次倒入花生油每次都要充分搅拌均匀。慢慢的搅拌大概10分钟左右。
  • 6.放入中筋面粉,戴上一次性手套揉成团。
  • 7.成团后我一般习惯把它放在硅胶垫上搓几下,因为这个方子不用醒面,所以要揉均匀。
  • 8.揉好盖上保鲜膜,可以直接分成12份,也可以包的时候一个一个取。
  • 9.把五仁馅分成12个50克并搓成球。
  • 10.取25克月饼皮用手撑压扁,放入一枚五仁馅。利用虎口把馅包好。
  • 11.包好后粘薄薄一层中筋面粉,用手拍去多余的干粉,然后放入阳晨75克月饼模具中。
  • 12.放在烤盘上压出图案。
  • 13.烤箱200度预热10分钟后,用喷雾瓶在月饼上喷一层水(薄薄一层哈),然后放进烤箱。
  • 14.烤5分钟后取出,刷一层薄薄的蛋黄液,继续放进烤箱烘烤。200度再烤8分钟左右出炉(具体要看上色情况)
