  • 1.排骨请卖家剁成大块,洗一下血水。
  • 2.冷水下锅。
  • 3.焯两三滚儿。
  • 4.捞出洗净浮沫儿和骨渣。
  • 5.锅里适量油烧热,姜葱,花椒,香叶,辣椒,冰糖,桂皮放入炒一下。
  • 6.2勺郫县豆瓣酱。
  • 7.翻炒出红油。
  • 8.适量盐,蚝油,生抽,老抽调味儿。
  • 9.倒入适量清水烧开。
  • 10.倒入煮锅里,焯过水的排骨放入。
  • 11.加开水没过排骨,加入一勺黄豆酱。
  • 12.倒入两罐啤酒。
  • 13.搅匀。
  • 14.大火烧开,转小火炖将近一个半小时。
  • 15.关火浸泡几个小时更入味儿。
