Steps to make 沂蒙炒鸡

  • 1.三黄鸡洗净斩小块,放开水里把鸡块过下水,去除鸡的血腥味,捞出鸡块待用。
  • 2.椒、红椒切块。
  • 3.葱切段、姜切丝、蒜切片。
  • 4.炒锅烧热加油,下入花椒、大料、桂皮、小茴香、丁香、白芷炒出香味。
  • 5.下入葱段、姜丝,再下入鸡块翻炒。
  • 6.鸡块炒变色后加入适量料酒,再加入少许老抽翻炒。
  • 7.炒到汤汁渐无,加入一大勺黄豆酱翻炒,如果太干可一边炒一边分  几次点入少量清水。
  • 8.炒至熟烂后,再下入青椒、红椒翻炒约1分钟,加盐、鸡精炒匀出锅。
