咸蛋黄叉烧
一整块腌过的夹心肉烤成鲜美入味的叉烧,紧紧包裹着油香的咸蛋黄,就像藏着一颗太阳般温暖绵密的心。 先生说肉嫩鲜香,内藏乾坤,红火的肉寄托了年年岁岁丰盛美满的期望,而心中亦有团圆。
没有现成的叉烧酱,于是搜了美友们的菜谱,结合自家的材料来自制了叉烧酱,有点多,密封冷藏了一部分等下次再用。

  • 红糖(冰糖)100g
  • 生抽60g
  • 黄酒30g
  • 芝麻酱30g
  • 芝麻油5g
  • 蚝油60g
  • 甜面酱40g
  • 腐乳2块
  • 腐乳汁2汤匙
  • 麦芽糖25g

Steps to make 咸蛋黄叉烧

  • 1.蒜切碎、姜切片。
  • 2.叉烧酱材料:红糖100g、生抽60g、花雕酒30g、芝麻酱30g、芝麻油4g、蚝油60g、甜面酱40g、腐乳2块、腐乳汁2汤匙、红曲粉适量、麦芽糖25g。
  • 3.锅中倒油加热,下姜蒜小火慢炸到蒜末微微变黄,关火,捞出姜蒜。
  • 4.把叉烧酱材料倒入锅中,搅拌均匀后加水半碗,小火熬煮,煮到糖全部溶化,煮沸后再煮稠一些,煮酱料期间要不停搅拌,防止糊底。
  • 5.淀粉加适量水调成水淀粉,不用太多。
  • 6.把水淀粉划圈倒入,边倒边搅拌,搅拌到淀粉糊化,酱料变厚浓稠,关火晾凉。(炒好的叉烧酱,可以装在消毒好的密封瓶中冷藏保存。)
  • 7.夹心肉洗净,中间用剪刀往肉的肚子里开一道口。
  • 8.塞入2个咸蛋黄。
  • 9.用棉绳扎紧口。
  • 10.放入姜片和葱段,加入叉烧酱汁抹匀,用牙签插些小洞,盖上保鲜膜进冰箱冷藏一晚上,腌制至完全入味,期间翻拌几次,使之更均匀裹上酱汁。
  • 11.将烤盘铺上两层锡纸,将腌肉的葱和姜挑出来,腌好的叉烧肉放在烤盘上。腌肉的汁不倒掉。
  • 12.放入预热好的烤箱,上下火190度 ,中层,烤盘上再覆盖一层锡纸,这样烤出来的肉不柴不干。
  • 13.烤20分钟后取出翻面,刷上一层腌肉汁,放入烤箱再烤20分钟,这次可以不盖锡纸。
  • 14.蜂蜜和等量的水搅匀,刷在烤肉上,再放回烤箱烤3分钟即可。
  • 15.烤好的肉,看颜色就已经很诱人了。
  • 16.鲜美入味的叉烧肉,紧紧包裹着油香的咸蛋黄,就像藏着一颗太阳般温暖绵密的心,寄托了年年岁岁丰盛美满的期望。
