还记得电视剧《三生三世枕上书》的里面出镜率最高的美食糖醋鱼吗?最近电视剧重温,突然想来复制一下,成品尝了一下,酸甜可口的肉质鲜嫩,搭配上外焦里嫩的口感,沾上一口茄汁糖醋,这味道果然应了那句--“人间烟火味,最抚凡人心”。

  • 番茄酱3匙
  • 白糖5g
  • 淀粉5g
  • 米醋2勺

Steps to make 《三生三世枕上书》同款糖醋鱼~茄汁糖醋鱼

  • 1.将鲜活鲈鱼让店家帮助处理,回家洗净后沥干水分,鱼的两面用刀分别划几道口子,以方便入味;葱和姜分别切成葱段和姜片。(分成二份,一份腌制另一份爆炒)
  • 2.准备好全部食材和辅料。
  • 3.将鲈鱼放入盘中,加入2勺料酒和适量的盐,然后给鱼来个“全身按摩”,再把一部分葱段和姜片放在鱼身上和肚子里,腌制二十分钟左右。
  • 4.去掉葱段和姜片,用厨房纸将鱼身上的水分吸干。锅内放油烧热,放入葱姜先爆香后捞出,鲈鱼用中小火煎制,待一面定型变色后,再翻到另一面煎制,取出装盘备用。
  • 5.锅内加少许油放入番茄酱小火翻炒均匀,再调入糖、柠檬汁、白醋、少许盐和1匙料酒混合炒香。加入一碗热水烧开,然后把鱼放入锅中继续中小火加热。期间翻面一次,用勺子舀起多余汤汁淋到鱼身上,使鱼更加入味,最后把淀粉用水化开倒入锅里,轻轻搅拌一下收汁。
  • 6.将煮好的鱼盛到盘中,再把锅中剩余的茄汁汤浇汁,淋在鱼身上,上面撒香菜段装饰一下。
  • 7.一道美味的茄汁糖醋鱼就完成了,肉质细嫩、酸甜开胃!
