名小吃也可以做菜肴---尤溪卜鸭
福建尤溪“卜鸭”的生产,已有100多年的历史。当地逢年过节、婚寿喜事,一般都要熏制“卜鸭”以招待宾客。所谓“卜鸭”,是用米及茶叶熏制而成的鸭子。“卜鸭”带有烟熏特有的香味。如果家里来了重要宾客主人就会用鸭腿来招待,尤溪人民非常好客。一个大鸭腿两个煎蛋和自制的红酒装上一碗,请贵客食用。老公第一次到我家看到这么好客的爸爸妈妈,被这一大碗的鸭 蛋 酒吓得够呛。一个超级大鸭腿就够饱一顿,不会喝酒的他就有一些怕怕的。不过现在抓酒驾比较严格,一般说到开车主人家都不会强求要喝了。
制作方法:1.要选取较肥大的鸭(在1.75千克左右),收拾干净。用竹篾支撑住整只鸭子,然后调好盐巴味精大蒜辣椒辣椒汁涂抹在鸭子的身上,腌制一上午。

2..然后在干铁锅底铺上100克大米和一小撮茶叶,上架一铁丝网(铁丝网距锅底约15厘米左右),将鸭放在铁丝网上,盖上锅盖,盖边隙缝用湿布围好,务使之密闭。灶下用小火,使锅底的米、茶叶缓烧成烟,熏透全鸭。

4.待锅边冒出的烟气由白色转为黄色时即可出锅。

5.待吃的时候在蒸熟砍好装盘即可食用了。

产品特点:鸭身呈牙黄色,油光闪亮,皮酥肉嫩,香气扑鼻。食用时剔骨切片装盘。蘸以蒜泥、醋佐酒,风味十足.

  • 1.材料番鸭1/4只 生抽适量 料酒适量 盐巴适量 大蒜1瓣 辣椒粉适量 大米两把(用手抓)
  • 2..倒入料酒。
  • 3..倒入生抽。
  • 4..倒入大蒜和辣椒粉抹均匀。
  • 5..抹上盐巴,装入盘子包上保鲜膜放入冰箱腌制一夜。
  • 6..坐锅上火架好筷子。
  • 7..架上鸭子。
  • 8..盖上盖子开大火,看到冒烟的地方盖上湿布。待大火开到10分钟转文火在熏10分钟就差不多了。条件有限我只能熏1/4如有有竹篾我就熏一只来做一个整体的。
