Steps to make 鲜嫩酥烂---三杯竹笋

  • 1.红葱头剥皮、去根,切小块;姜切片、朝天椒切成斜片;九层塔洗净,取叶片待用。
  • 2.春笋去壳,切成滚刀块。
  • 3.锅置火上适量油烧至7成热,放入笋块炸至笋块表面微微收缩捞出。
  • 4.另起锅,注入香油烧至5成热,放入蒜粒、红葱头、姜片、朝天椒爆香。
  • 5.放入笋块,加入生抽、冰糖翻炒片刻。
  • 6.锅中调入米酒,大火烧至汤汁渐浓。
  • 7.撒入九层塔翻炒至叶片变软即可。
