红曲戚风蛋糕卷

Steps to make 红曲戚风蛋糕卷

  • 1.蛋黄4个,加入玉米油50克,酸奶100克混合搅拌均匀。低粉90克,红曲粉15克过筛加入蛋黄糊中。搅拌至无颗粒状态面糊。
  • 2.蛋白磕入无油无水盆里滴入几滴醋或者柠檬汁也可以。
  • 3.然后用中速搅打25秒,再转低速搅打,使大气泡变成细腻小气泡;加入1/3细砂糖。继续低速搅打,打出更加细腻、纹路更清晰时,加入剩下的1/3细砂糖。蛋白糊出现光泽且打蛋器有阻力时,提起打蛋器,蛋白糊呈大弯钩。如图所示。
  • 4.先取三分之一蛋白霜,加入到蛋黄糊中。
  • 5.再取三分之二蛋白霜加入到蛋黄糊中,也是从底部往上拌均匀。
  • 6.最后将蛋黄糊全部倒入蛋白糊中,从底部往上拌均匀,切勿打圈。上拌均匀,切勿打圈。
  • 7.入格兰仕42升烤箱,水浴法,上下火160度,烘烤25分钟,每家烤箱品牌大小,不一样所设置的温度和时间不一样。
  • 8.取出来;冷却。均匀抹一层淡奶油。
  • 9.卷起来,切断,成品图。
