Steps to make 三日波兰种软欧,下班也能做

  • 1.第一天做波兰种:将干酵母与水混合,搅拌均匀后加入黑全麦粉、继续搅拌成无干粉状态,盖上盖子放入冰箱冷藏一晚。第二天做主面团:将高筋粉、黑全麦粉、水融合,搅拌至无干粉状态就可以了,然后盖上盖子室温松弛30分钟,松弛完成后加入波兰种,混合均匀后静置30分钟,然后加入盐与面团混合均匀,混合均匀后盖上保鲜膜放入冰箱冷藏一晚。
  • 2.第三天发酵整形+烘烤:面团每半个小时进行一次“叠被子”,每次折叠好之后放冷藏,共操作四次,总时长不低于两小时。
  • 3.案板撒少许面粉,用刮板最后一次叠被子整形,再撒少许干粉,将面团翻身到油纸上,最后一次醒发30分钟。
  • 4.铸铁锅盖上锡纸,提前放入烤箱,预热240度中下层烤40分钟。用刀片在面包上割出喜欢的花纹,连同油纸一起放入铸铁锅中,盖上盖子和锡纸送入烤箱,240度先烤25分钟。
  • 5.然后取出锡纸和锅盖,烤箱调整至220度,热风烤15-18分钟即可。
