【北京】猪肉萝卜丝汤
俗话说“冬吃萝卜夏吃姜”。现在正值冬季,这大萝卜也是应季的块茎类蔬菜,其富含维生素C,其它微量元素和矿物质也很丰富。
萝卜生吃助消化,熟吃理气,一般人群都可食用。冬天北方气候干燥,因此汤要常喝,补充身体所需的水份;而南方湿冷,多喝汤可排出体内寒湿邪气。
今天我就用白萝卜做一道快手鲜汤。里面有个小窍门,可以让肉片滑嫩嫩的,真有入口即化之感。

  • 瘦猪肉150克
  • 淀粉一小勺
  • 橄榄油少许
  • 香菜少许

Steps to make 【北京】猪肉萝卜丝汤

  • 1.猪瘦肉清洗干净,去掉筋膜
  • 2.切成薄片,用一小勺淀粉、少许盐、少许清水抓捏均匀,腌10分钟左右
  • 3.白萝卜刮掉外皮,如果特别干净也可以不刮
  • 4.用擦丝器擦成细长丝
  • 5.入煮锅中,加适量的水煮开
  • 6.肉片要下锅了,小窍门要出场了!转小火,让水保持微开状态,用筷子将肉片一片片快速入锅中,待全部肉片都放进去了,就转大火,煮开即可关火,这时的肉片滑嫩嫩,汤鲜美
  • 7.出锅前根据口味撒盐,淋少许橄榄油、撒少许香菜
