6寸戚风蛋糕
做生日蛋糕用戚风蛋糕体,再适合不过了。

  • 玉米油30G
  • 鸡蛋3个
  • 细砂糖30G(蛋白)
  • 细砂糖10G(蛋黄)
  • 柠檬适量(或白醋)

Steps to make 6寸戚风蛋糕

  • 1.准备好,称好要用到的材料
  • 2.蛋白和蛋黄分离(蛋白)
  • 3.蛋白和蛋黄分离(蛋黄)
  • 4.蛋白加入少许白醋或柠檬汁,用打蛋器打发,分3次加入白糖,分次加入可以助蛋清起泡。
  • 5.打至提起打蛋器上呈坚挺的小三角形就可以了,放置冰箱冷藏待用
  • 6.蛋黄中加入糖混合均匀,再分3次加入玉米油(可以用其它无味食用油代替),搅拌均匀
  • 7.加入过筛的低粉,粉过筛面糊更细腻
  • 8.十字形搅拌均匀,切勿过度搅拌
  • 9.蛋黄搅拌后,加入1/3的蛋白,翻拌均匀,要从盆底向上翻拌,不可圆圈式搅拌,否则面粉会起筋,搅拌的时候要快,以免消泡
  • 10.搅拌均匀后再将蛋黄糊倒入剩余的蛋白中充分混合(一定要翻拌,快速的,可以一边鄱拌一边手转盆),然后倒入6寸蛋糕模具,用刮刀稍抹平表面,然后在桌子上磕2、3次,震出蛋糕糊里大气泡,120度预热烤箱5分钟,放入蛋糕
  • 11.120度低温烤35分钟,这个时候蛋糕差不多长到最高,然后调至150度25分钟,给蛋糕上色,烤熟(每个烤箱脾气不同,调温后注意上色情况,也可用牙签插入蛋糕体,牙签干净无蛋糕粘在上面说明蛋糕烤好了)还不错哟。出炉后冷却后回落一些,刚好表面平整的。
