椰香戚风蛋糕
前两天也烤了椰香蛋糕,但是出炉后都塌了。今天调整了时间和温度,再战!

  • 细砂糖60克
  • 纯椰子粉15克
  • 开水45克
  • 椰蓉10克
  • 色拉油30克
  • 柠檬汁几滴
  • 椰蓉少许

Steps to make 椰香戚风蛋糕

  • 1.纯椰子粉(只有椰子粉,里面什么都没加)用45克开水冲泡好,晾至手温。
  • 2.分离蛋清和蛋黄。蛋黄中加入色拉油和20克砂糖,搅打至砂糖融化。
  • 3.加入晾好的椰子汁,搅拌均匀。
  • 4.筛入低筋粉,放入椰蓉,用打蛋器呈Z字型拌成细腻的面糊。
  • 5.蛋清中加入几滴柠檬汁,分次加入剩余的40克砂糖,打发至硬性发泡。
  • 6.取一半的蛋白霜到蛋黄糊中,翻拌均匀。这时预热烤箱,150度。
  • 7.将拌好的蛋黄糊倒回蛋白霜中,翻拌均匀。
  • 8.将蛋糕糊倒入8寸圆模中,入烤箱,最下层,上下火,150度,烤60分钟左右。
  • 9.出炉后,震几下,震出热气,立即倒扣至完全冷却。切开后撒上少许椰蓉即可。
