热狗花形面包

Steps to make 热狗花形面包

  • 1.将23g开水冲入20g高筋粉中,用筷子搅拌均匀。如图。放入冰箱冷藏过夜。
  • 2.后油法将面团揉至扩展阶段,放入盆中,盖上保鲜膜,进行基础发酵约一小时。
  • 3.面团发至两倍大,手指沾粉,中间戳洞,不回缩不膨胀,基础发酵结束。
  • 4.将面团排气,滚圆,分割成6个75g的面团。滚圆,盖上保鲜膜,松弛15分钟。
  • 5.将香肠去掉头尾备用。
  • 6.将松弛完的面团排气,滚圆,擀成椭圆形,四个角拉一下变成长方形。
  • 7.放上热狗。
  • 8.接口捏紧。
  • 9.两头捏紧。
  • 10.切七刀,均分8份。
  • 11.在烤盘中扭出花形。
  • 12.扭好所有的花形。
  • 13.放入烤箱,进行二次发酵,约40分钟。
  • 14.二发结束后,取出烤盘,给面包表面刷蛋液,中间撒上干罗勒。
  • 15.烤箱预热325F(163C),中上层,15分钟。
