  • 1.鸭肉洗净,切成中等大小的块便于入味,过于肥厚的鸭皮剔下来。
  • 2.鸭肉放入碗里,加入料酒,盐,生抽,姜片,葱段,腌制20分钟。
  • 3.把剔下来过于肥的鸭皮脂肪放入锅里。
  • 4.小火用铲子按压,慢慢逼出鸭油。
  • 5.待鸭皮两面变金黄时,很多鸭油都出来了,盛出鸭皮。
  • 6.鸭油里倒入干辣椒,花椒炒香。
  • 7.倒入腌制好的鸭肉翻炒熟。
  • 8.倒入老抽翻炒上色。
  • 9.倒入一瓶啤酒,没过鸭肉,中小火慢慢烧。
  • 10.慢慢收汁,倒入青椒翻炒即可。
