香辣牛腱萝卜煲
香、辣、鲜、爽口、有嚼劲

  • 牛腱子500克
  • 白萝卜1条
  • 干野山椒6颗
  • 大葱3段
  • 生姜片4片
  • 花椒少许
  • 八角一枚
  • 少许
  • 酱油少许
  • 2匙
  • 香油2匙

Steps to make 香辣牛腱萝卜煲

  • 1.先把买回来的牛腱切成大块,块头大小看自己喜欢,放到冷水里泡着,放血水。至少1小时吧,我提前2小时就开始泡着了,就是红红的一盆血水。把血水倒掉再重新加清水泡着备用。
  • 2.配料:干辣椒、大葱段、生姜片、八角两粒、花椒少许。
  • 3.热锅放少许油,因为牛肉本身就含有很多动物性脂肪所以放一点点油就够了。油热后改小火,下花椒、八角和干辣椒,出香味后放葱姜。
  • 4.炒出香味后下牛肉块
  • 5.翻炒几下,开始变色了倒入酱油、少许糖和盐、翻炒均匀。干的话加点水,我没加水,多倒点酱油为了上色和入味
  • 6.颜色均匀第一次开锅的时候转小火,把牛肉转移到砂锅里
  • 7.焖40分钟到1小时,牛肉软烂入味了,下白萝卜块
  • 8.干了加点水不要多,盖盖子中火焖,中间也要经常翻翻,萝卜一样会粘锅的。大概20分钟左右就可以出锅了。喜欢吃软点的萝卜就再多焖10分钟左右
  • 9.颜色均匀第一次开锅的时候转小火,把牛肉转移到砂锅里
  • 10.焖40分钟到1小时,牛肉软烂入味了,下白萝卜块。用筷子拌拌。
  • 11.干了加点水不要多,盖盖子中火焖,中间也要经常翻翻,萝卜一样会粘锅的。大概20分钟左右就可以出锅了。喜欢吃软点的萝卜就再多焖10分钟左右
