炸八块最好选用小公鸡仔,肉质鲜嫩。

Steps to make 炸八块

  • 1.剁去鸡头鸡脚,从中间剁开。
  • 2.再把鸡腿和鸡胸脯分开。
  • 3.再各切为二,骨头剔出。
  • 4.加入姜葱末。
  • 5.加入生抽、料酒、拌匀腌制约1时。
  • 6.温油入锅,把鸡块浸至断生。
  • 7.捞出鸡块,把油温加高。
  • 8.再入锅炸制。
  • 9.炸至金黄捞出控油装盘,撒入椒盐即可。
