豆面糕
豆面糕,俗称驴打滚。以前在公主坟那边的商场吃的最香,后来离的太远,不常吃了。前段时间,看见超市有黄豆面卖,于是又动了自己做的念头。为什么说又呢,呵呵,因为以前俺做过嘛,博客也有记录,但没有这次精细。毕竟俺滴水平也有提高嘛,(*^__^*) ……。

  • 黄豆面250克
  • 糯米粉250克
  • 清水250克
  • 冰糖50克
  • 糖桂花25ml

Steps to make 豆面糕

  • 1.红豆洗净后,加足量的水浸泡3小时以上。
  • 2.泡好的红豆放入锅里,加入冰糖和清水。
  • 3.水尽量要一次放足,大火烧开,转小火慢慢烧煮1小时以上。
  • 4.半小时后要不时的翻拌,避免糊锅,直到水分煮干,红豆煮烂。
  • 5.关火,调入糖桂花,拌匀。
  • 6.微温时,用勺子按压煮好的红豆,成泥状。
  • 7.黄豆面放到平底锅里,小火不停的翻炒。
  • 8.直到黄豆面颜色变成浅褐色,飘出明显的豆香味。
  • 9.炒好的豆面过筛,放凉。
  • 10.糯米粉放入盆里,加水不停的用筷子搅拌,使糯米粉均匀吸收水分。
  • 11.用手把吸水后的糯米粉和成团,在盆中压平。
  • 12.把盆盖保鲜膜,放在蒸锅里,大火蒸20分钟,取出放至温热。
  • 13.取少量炒好的黄豆面撒在案板上。
  • 14.把温热的糯米面团放在黄豆面上,上面再撒一层黄豆面,用擀面杖来回上下左右擀压。。
  • 15.糯米面团最后制成0.5cm后的面皮,上面涂抹红豆沙,刮平。
  • 16.紧密的从一头翻卷,成卷状。
  • 17.切割卷好的豆面糕,每段4cm左右。
  • 18.将余下的黄豆面均匀的撒在豆面糕上,大功告成。
