Steps to make 老北京炸酱面

  • 1.锅内烧油,油要多一些,油烧至4成热的时候,将猪肉末、料酒、葱姜蒜依次放入锅内翻炒。
  • 2.待猪肉馅变色,再加入甜面酱、黄豆酱、水,转中火熬制。期间根据肉酱的稀稠,适当加水调整,多熬一会更好。
  • 3.水快干的时候,加上水淀粉,搅拌均匀,酱就做好了。
  • 4.另外起锅煮面,水开下面条煮熟,捞出过凉水,放到碗里备用。准备配菜,一般是黄瓜丝、胡萝卜丝、豆芽、香菇等,我今天就准备了黄瓜丝和胡萝卜丝。
  • 5.再淋上炸酱,拌匀就可以吃了~酱汁浓郁包裹着面条,混合着肉香,这味道绝了。
