驴打滚
驴打滚由黄豆粉、糯米粉和红豆沙卷裹而成,制作时要将馅卷得均匀,层次分明,外层粘满黄豆粉,豆香馅甜,入口绵软,别具风味,是老少皆宜的传统风味小吃,且,食材简单,操作简便,我们家常做。

  • 粘米粉150克
  • 牛奶(或清水)650克
  • 白糖50克
  • 红豆沙馅250克

Steps to make 驴打滚

  • 1.将糯米粉、粘米粉、牛奶、白糖混合均匀。
  • 2.倒入刷了一层薄油的盘子里。
  • 3.装米糊的盘子上盖个盘子(防止水蒸汽滴落米糊),放入锅里,大火将水烧开,中火蒸约30分钟(根据米糊的厚薄调整蒸制时间,米糊表面变硬即熟了)。
  • 4.取出蒸熟的糯米糕,稍晾凉。
  • 5.用刮板将糯米糕收成团。
  • 6.戴上一次性手套,双手将糯米团反复揉搓至有一定的韧性,这样擀出的糯米皮才柔软。
  • 7.案板上铺一张保鲜膜,铺一层熟黄豆粉。
  • 8.放上揉好的糯米团,表面铺一层熟黄豆粉。
  • 9.面团上铺一张保鲜膜。
  • 10.擀成长方形面片,铺一层红豆沙馅。
  • 11.卷起。
  • 12.切块,装盘。
  • 13.软糯香甜,营养美味。
