  • 羊多多羊后腿肉750克
  • 大料1瓣
  • 姜片4片
  • 花椒6粒
  • 食盐5克
  • 蚝油1小勺
  • 生抽2小勺
  • 淀粉15克
  • 白糖4克
  • 枸杞子3粒
  • 黄瓜片20克
  • 香油2~3滴

Steps to make 羊多多——红扒羊肉

  • 1.将羊多多的羊后腿室温化冻,剔下一块羊肉;
  • 2.将羊腿肉浸泡在凉水中2小时,中间换一水;
  • 3.将羊腿肉放入砂锅内,倒入凉水;
  • 4.大火烧开后,撇干净血沫子后,放入姜片、大料、花椒;开始炖煮直到用筷子能够扎透羊肉后,再放入食盐,关火;
  • 5.将煮好的羊肉捞出,晾凉;切去不规则的边角,整理成长方形后切2~3毫米的肉片;
  • 6.将切好的羊肉片码入餐盘里,入蒸锅内蒸5分钟回温;
  • 7.炒锅内倒入煮羊肉的汤,小火慢慢加热,加入1小勺蚝油;
  • 8.再加入2小勺的生抽,少许白糖,搅拌均匀;
  • 9.待肉汤冒小泡时,慢慢淋入水淀粉,再滴入香油;
  • 10.将做好的芡汁淋在羊肉片上,简单装饰餐盘即可。
