凉拌酸辣藕片

Steps to make 凉拌酸辣藕片

  • 1.青线椒、小米辣和蒜头切小粒,胡萝卜切丝。
  • 2.把青线椒、小米辣、蒜头放入小碗中,加一小勺盐、一勺糖。
  • 3.把烧得冒烟的热油倒进小碗中。
  • 4.迅速搅拌一下,让盐和糖融化,热油也很好的让调味食材增香。
  • 5.加入一大勺生抽、一勺白醋、一点点胡椒粉、一勺凉开水,搅拌均匀。
  • 6.一大截莲藕,去皮清洗干净,切成比硬币稍厚的薄片。
  • 7.放入清水中浸泡5分钟,这样可以去掉藕片的表面淀粉。
  • 8.起锅烧水,水中加一点点盐,水开后放入莲藕片,焯水一分钟即可。
  • 9.捞出来沥干水份。
  • 10.迅速放入冰水中浸泡降温(我提前放了一个大冰袋在水里),这样迅速降温冷却,莲藕片会非常爽脆。
  • 11.浸泡5分钟,捞出沥干水份。
  • 12.沥干水份的莲藕片放入大碗中,把胡萝卜丝也放进去,把刚才调好的酱料汁倒进去。
  • 13.抓拌均匀,盖上保鲜膜,放入冰箱冷藏一小时。
  • 14.一小时后取出来,藕片已完成吸收酱料,这时来下一点芝麻油增香,翻拌均匀即可装盘。
  • 15.酸辣爽口的凉拌莲藕片,夏日开胃小吃,简单又快手。
