【天津】韭菜鸡蛋素饺子
天津有春节吃素饺子的习俗,除了典型的天津年味素饺子,就是里面放了粉皮、鸡蛋、香干的那种,就数这简单又让人吃了忘不掉的素韭菜鸡蛋饺子了。馅很简单,里面也不用放过多的调料,甚至连葱姜都可以不放,但就是香得让人欲罢不能。冬季、春季、秋季都是食用韭菜的季节,过了夏季,韭菜就开始是清香的,炒菜做馅都好吃。
韭菜又叫起阳草,味道非常鲜美,还有独特的香味。韭菜的独特辛香味是其所含的硫化物形成的,这些硫化物有一定的杀菌消炎作用 ,有助于人体提高自身免疫力。
韭菜性温味辛,有补肾温阳、益肝健胃、行气理血、润肠通便的作用。韭菜还含有丰富的纤维素,每100克韭菜含1.5克纤维素,比大葱和芹菜都高,可以促进肠道蠕动、预防大肠癌的发生,同时又能减少对胆固醇的吸收,起到预防和治疗动脉硬化、冠心病等疾病的作用。
韭菜和鸡蛋两者同食补益作用明显,对胃病和肾病患者有很大的作用。韭菜与鸡蛋除了炒食,就是做素馅了。之前都一直吃肉馅的饺子,这次试一下素馅。老爸说韭菜素馅有着独特的魅力,只放韭菜鸡蛋,其他的一概不放,什么虾皮、粉条、油条之类的都不要放。韭菜素馅吃的就是素、清香,饺子馅与包子馅不同,饺子馅简单些更能吃出原汁原味。食材太多就太杂了,倒不好吃。我还半信半疑,赶紧试着做了,事实胜于雄辩,真是清香清爽,吃到胃里很舒服,就这样连着吃了三天韭菜鸡蛋饺子一点都不腻,还觉得没吃够,真是比肉馅香多了。就是素馅发散,不那么好包。

  • 1.5调味匙

Steps to make 【天津】韭菜鸡蛋素饺子

  • 1.面粉中加入水,揉成光滑面团,静置
  • 2.韭菜择好,水中放少许食用碱浸泡1个小时,去除农残。洗净控干水份
  • 3.韭菜去掉根部一点,切碎
  • 4.两个鸡蛋放少许盐打散,锅中加适量食用油,倒入鸡蛋液,用筷子打散
  • 5.鸡蛋加入切碎的韭菜、食用油、少许白胡椒粉,最后加盐和香油拌匀
  • 6.取一块面搓成长条,揪相同大小的剂子,擀成中间厚边缘薄的饺子皮
  • 7.包入适量馅,捏成饺子。素馅比较散,不好包,要用勺子舀馅
  • 8.水烧开后饺子下锅煮至饺子鼓起即可
