查了很多美食平台竟然没人写这道好吃的溜肚片。它香鲜脆嫩,特有的肚片口感,是一道很好的下饭菜。

Steps to make 溜肚片

  • 1.买来的猪肚用醋,盐和面粉反复搓洗后凉水下锅烧开焯一下捞出控干水分,另起锅下入葱姜,料酒,花椒大料,老抽和适量盐煮熟。筷子轻松插透即可。
  • 2.肚切抹刀片,葱姜蒜切末,木耳泡发好入开水锅中焯一下沥干水分,杭椒切斜段,红椒切菱形块备用
  • 3.锅烧热入油烧热下入肚片迅速滑油,捞出控油备用(油温5成)
  • 4.锅烧热入油烧热下入花椒粒葱姜蒜小火煸香
  • 5.下入肚片和木耳,加入生抽,蚝油,鸡粉,盐,胡椒粉翻炒均匀,勾入水淀粉
  • 6.加入青红椒翻勺出锅即成
