糖醋脆皮虾仁

Steps to make 糖醋脆皮虾仁

  • 1.虾仁挑去虾肠洗干净控干水,加一勺料酒,半勺白糖,少许盐抓匀腌制十分钟以上。
  • 2.一个蛋清打散。
  • 3.蛋清里加马铃薯淀粉和面粉比例2:1。马铃薯淀粉的黏度大些,有助虾仁炸出脆皮,加少许水调成粘稠的面糊备用,水一点点的加面糊要粘稠。
  • 4.腌好的虾仁,放进面糊里裹上厚厚的面糊。虾仁一定要裹住面糊才能炸出脆皮的看我面糊的状态。
  • 5.锅里多烧热些油,虾仁下锅炸至定型捞出。
  • 6.不要炸过,稍变色捞出。
  • 7.待虾仁凉了以后重新复炸一遍,这样虾仁就会有脆皮了。
  • 8.小火慢炸出脆皮捞出。
  • 9.白糖,白醋,生抽,淀粉,番茄酱,盐,加适量水调匀成料汁。
  • 10.锅里烧热一点点油,将料汁倒进锅里烧开。
  • 11.炸好的脆皮虾仁下锅快速翻匀挂上料汁关火。动作快不要炒起没完把脆皮破坏掉。
  • 12. 装盘,趁热吃皮超脆。
