梅菜扣肉
每年的腊月,老妈总喜欢买些矮白菜,一部分腌泡成酸菜,用来和大骨炖汤,另一部分就晒成梅干菜,既方便又耐以保存,无论是配肉红烧还是小炒,那鲜甜的口感总叫人难忘。
   梅菜扣肉是梅干菜最经典的做法,肥瘦相间的五花肉经过炸,蒸,变得软糯,不仅不再油腻,而且渗出的汁水被梅菜吸收,使的梅菜也变得异常美味,不过好吃也应适量摄取,毕竟大荤油腻的食物还是不利于健康。

Steps to make 梅菜扣肉

  • 1.原料图。
  • 2.五花肉,八角,香叶,姜片,小葱扎成葱把放入锅中,滴入料酒去腥,加入清水,以没过肉为准。大火煮开。
  • 3.梅干菜切丁。
  • 4.将煮好的五花肉,连同姜片,葱把,八角,香叶一起捞出。
  • 5.用牙签在肉皮上扎上小孔,便于入味。
  • 6.取一大碗,倒入老抽,并将冰糖化开后一同拌匀,将煮好的肉放入腌制半小时,每十分钟翻面一次。
  • 7.腌好的肉捞出沥干。
  • 8.锅中倒入适量的底油。
  • 9.肉皮朝下,中火炸至肉皮焦黄后捞出。
  • 10.炸好的五花肉沥油。
  • 11.泡发好的梅菜倒入炸肉的油锅中翻炒。
  • 12.将腌肉的汤汁倒入。
  • 13.加入适量的开水,待烧开后关火。
  • 14.沥油后的肉切成片。肉片大小可根据个人喜好。
  • 15.将切好的肉片皮朝下放置碗中。
  • 16.覆盖上炒好的梅干菜。
  • 17.电压力锅蒸熟后倒扣于盘中即可。
