莲蓉蛋黄月饼
自制莲蓉蛋黄月饼低油低糖无添加咬一口就上瘾学会不用买。

  • 转化糖浆130克
  • 玉米油45克
  • 枧水2克
  • 莲蓉馅720克
  • 咸蛋黄12个
  • 全鸡蛋液少许(刷月饼皮用)
  • 月饼模一个(100克的)

Steps to make 莲蓉蛋黄月饼

  • 1.先将转化糖浆、油和枧水搅拌均匀,再筛入面粉搅拌均匀至无干粉即可,不要过度揉哦。
  • 2.(像耳垂样柔软),盖上保鲜膜,放入冰箱冷藏松弛2个小时。
  • 3.取出莲蓉馅,分成均匀的12个。
  • 4.取出一个莲蓉馅包入一个咸蛋黄(咸蛋黄我这次是用的熟的海鸭蛋黄,不用处理,可以直接用哦)。
  • 5.分别滚圆,蛋黄莲蓉馅就好了,备用。
  • 6.松弛好的饼皮面团,分成均匀的12个小剂子。
  • 7.取出一个饼皮面团,按压成薄皮。
  • 8.包入莲蓉蛋黄馅。
  • 9.团成圆形,取出一个,滚上一层薄面粉,放入模具中。
  • 10.压入烤盘中,中间留出空隙。
  • 11.喷水,放入预热好的烤箱中(200度),中小层,先烤5分钟,定型后取出。
  • 12.刷薄蛋液,再次放入烤箱中,转160度,烤15后出炉即可。
