Steps to make 自制四川麻辣香肠

  • 1.买来的猪腿肉清洗干净后去皮。
  • 2.按照肥三瘦七的原则,将猪腿肉切成小块。
  • 3.准备腌肉食材:辣椒面,花椒面,胡椒面,鸡精,生姜。
  • 4.将猪肉块装入盆中,分别加入食盐、辣椒面、花椒面、胡椒面、白糖,姜末和白酒。
  • 5.用手抓拌均匀后放入冰箱腌制一夜。
  • 6.翌日,泡发肠衣。
  • 7.泡软的肠衣套在灌肠器的出口上。
  • 8.在灌肠器的内壁中装入腌制好的猪肉块。
  • 9.成品图(灌制好的川味麻辣香肠准备分段、晾干)。
