金城宝塔
金城宝塔是饭店或者酒店的一道有名的杭帮菜,也是一道刀功菜,主要用滚刀来切五花肉

  • 泡菜40克
  • 蚝油1勺
  • 老抽3勺
  • 高汤粉2勺
  • 淀粉1勺
  • 2小勺

Steps to make 金城宝塔

  • 1.准备五花肉,洗净
  • 2.切五花肉,尽量取一块方整的
  • 3.五花肉焯水
  • 4.焯水后的五花肉抹上老抽
  • 5.热锅注油,把五花肉的皮朝下,炸1分钟,这样皮的口感会脆一些,有嚼劲
  • 6.重新起锅,锅中加水,加高汤粉,老抽,盐,把五花肉放入
  • 7.加盖煮10分钟
  • 8.取出五花肉,用刀进行再次修整,尽量修整成方形
  • 9.滚刀第一刀
  • 10.滚刀第二刀
  • 11.滚刀第三刀
  • 12.滚刀第四刀
  • 13.滚刀第五刀
  • 14.滚刀第六刀
  • 15.一直切到最后一刀,最后一刀横切
  • 16.把切好的五花肉卷起,再次成为方形
  • 17.从五花肉下部一层层推出来,形成宝塔形状
  • 18.五花肉下部塞入泡菜(一般饭店或者酒店塞的是芽菜,大家可以选择自己喜欢的菜)
  • 19.五花肉放入盘中
  • 20.五花肉放入蒸锅,小火蒸2小时,让五花肉口感酥
  • 21.水煮沸,放盐,放入西兰花和花菜,煮熟立刻捞出
  • 22.蔬菜摆盘
  • 23.把蒸好的五花肉放在中间
  • 24.重新起锅,锅中加水,加少许高汤粉,少许老抽,蚝油,少许盐,水淀粉勾芡酱汁
  • 25.将酱汁淋在五花肉上
