牛肉月饼
酱牛肉,恰逢中秋节,就做了个牛肉的月饼,用了传统的提糖月饼皮,做的牛肉馅的月饼。

  • 酱牛肉400克
  • 油炸花生碎50克
  • 熟芝麻仁50克
  • 麦芽糖300克
  • 调和油150克
  • 面粉450克

Steps to make 牛肉月饼

  • 1.面皮:麦芽糖、调和油、枧水混合均匀成糊,把面粉加入糊里,活成稍软的面团,放入保鲜袋里醒。
  • 2.酱牛肉加入油炸花生碎、熟芝麻仁混合均匀,加入蚝油调味,制成馅备用。
  • 3.酱牛肉馅分成大小相等的份。
  • 4.面皮分成大小相同的份。
  • 5.用面皮包裹馅料,放入模具,压成月饼,制成生胚。
  • 6.电烤箱上、下火200度先预热,放入生胚烤5分钟定型,定型后,拿出刷蛋液(蛋液是去掉一半蛋清后混合成的蛋液)。
  • 7.定型后的生胚,再入电烤箱,调成180度,烤15分钟即可。
  • 8.烤好的月饼,晾凉后,放入保鲜袋里,回软提浆。
  • 9.回软提浆24小时后取出。
  • 10.成品。
  • 11.牛肉馅的。
