木糖醇五仁月饼
木糖醇能促进肝糖原合成,血糖不会上升,对肝病患者有改善肝功能和抗脂肪肝的作用。吃木糖醇可以减少牙齿的酸蚀,防止龋齿和减少牙斑的产生,巩固牙齿,将其加入月饼当中,别有一番风味。

  • 中筋面粉200g
  • 木糖醇糖浆150ml
  • 玉米油50ml
  • 枧水2g
  • 综合坚果500g
  • 木糖醇砂糖150g
  • 熟糯米粉190g
  • 白酒16g
  • 白开水130ml

Steps to make 木糖醇五仁月饼

  • 1.准备月饼皮材料。
  • 2.木糖醇糖浆、玉米油、枧水放盆中,用手动打蛋器搅拌均匀。
  • 3.面粉砌粉墙,把和好的糖浆倒在中间。
  • 4.叠压成光滑的面团,手指压下去没有裂痕的状态,装保鲜袋松驰1.5个小时。
  • 5.糯米粉用不粘锅小火炒至颜色微微变黄,晾凉备用。
  • 6.准备各种坚果,放在烤箱里烤熟烤香,晾凉后掰成小块。
  • 7.木糖醇砂糖、玉米油、白酒、白开水一起搅拌至乳化,倒入坚果盆中拌匀。
  • 8.分次加熟糯米粉,每次拌匀再加下一次。
  • 9.拌好呈可以捏成团的状态,馅干的话可以适当加水,静置半小时。
  • 10.分成45克一个,捏成团。
  • 11.松驰好的面团分成20克一个。
  • 12.用刮板压成片。
  • 13.把馅包进去,轻揉成团。
  • 14.放入月饼模具,压出喜欢的花型。
  • 15.均匀的摆放在烤盘上。
  • 16.烤箱预热30分钟以上,上火230度、下火210度烤6-8分钟定型,微微上色取出。
  • 17.晾至手温以下,刷薄薄一层蛋液(1个蛋黄+1个全蛋+少许盐+几滴油搅拌顺滑),刷2-3次。
  • 18.再次送入烤箱,上火170度、下火160度烤8分钟左右,上色满意即可。
