扒牛肉条
天津特色菜当属八大碗与四大扒。“四扒”是个代言词,可做成八扒、十六扒,选其中四种即可组成“四扒”。扒牛肉条既是扒菜中的一道。扒牛肉条 色泽红润,牛肉酥烂,味鲜可口,虽说是名菜,但居家也可以品尝这道美味。我是和妈妈学的,味道不输饭店。

Steps to make 扒牛肉条

  • 1.将牛肉整块放入冷水内泡透,洗净血水,放入沸水锅中焯水后捞出洗干净
  • 2.牛肉放入电压力锅内胆,加葱姜
  • 3.再加清水,放入电压力锅
  • 4.选择营养炖,适中档
  • 5.压力锅解压后捞出牛肉晾凉,将牛肉切成大小、薄厚适中的片
  • 6.净面朝下码入碗内,碗中加入酱油、 盐、料酒、葱段、姜片、大料
  • 7.再加煮牛肉的原汤,将碗入蒸锅,旺火蒸20分钟
  • 8.去掉大料、葱姜,滗出汤汁,将牛肉扣入平盘内
  • 9.蒸牛肉的汤倒入炒锅内,加入酱油烧沸,水淀粉勾芡,淋芝麻油成芡汁
  • 10.将芡汁浇在牛肉上
  • 11.即可上桌享用
