Steps to make 姜橙香枕蛋糕

  • 1.先装蛋黄60克+全蛋液55克准备好,把糖姜汁倒入蛋液中。
  • 2.用手动打蛋器将其打至乳化状态,变成浓稠状,提前打蛋器时蛋液滴落的比较缓慢。
  • 3.倒入玉米油和橙汁后,继续用手动打蛋器搅拌均匀。
  • 4.低粉、玉米淀粉、泡打粉一起过筛入打发好的蛋黄糊中,用手动打蛋器画Z字让面粉和蛋黄糊搅拌均匀看不到干粉。
  • 5.蛋白分三次放入白砂糖,打发至硬性发泡,提起打蛋器蛋白呈现尖角。
  • 6.取三分之一打发的蛋白,放入蛋黄糊中,用刮刀翻拌均匀。
  • 7.将混合好的蛋粒糊重新倒回剩下的三分之二打发的蛋白中,继续用刮刀翻拌均匀
  • 8.放入刮好的橙皮屑,轻轻用刮刀翻拌。
  • 9.把准备好的蛋糕糊倒进模具中,震几下,送入预热好的烤箱中层,上下火,175度,烤大约25分钟即可。
