小绵羊纸杯蛋糕
利用了小嶋老师的海绵蛋糕体。

Details of ingredients

  • 全蛋150克
  • 砂糖110克
  • 水饴6克
  • 低筋面粉100克
  • 黄油26克
  • 牛奶40克
  • 奶油奶酪150克
  • 黄油25克
  • 糖粉12克
  • 淡奶油120克

Steps to make 小绵羊纸杯蛋糕

  • 1.将水饴、全蛋、砂糖放进盆里混合,稍微搅拌(不要打发)
  • 2.将盆放进热水里面隔水搅拌,使其温度达到40度后取出
  • 3.打蛋器高速进行打发,,看见蛋液变成白色,用打蛋器拎起蛋液,描一个8字,如果8字立刻消失那继续打发20到30秒,如果写完字还很清晰说明已经打发好了
  • 4.一次性筛入面粉,拌匀
  • 5.融化的牛奶黄油液体顺着橡皮刀撒在面糊周围继续搅拌,搅拌完毕后,面糊变得有光泽
  • 6.蛋糕糊装入裱花袋,挤入纸杯至8-9分满(此方子刚好做12个大连模)
  • 7.160度的烤箱烤30~35分钟
  • 8.将巧克力笔,在油纸上挤出羊角的形状,白色巧克力融化,挤出小圆形,冷藏定型。
  • 9.奶油奶酪和黄油室温软化,加入糖粉混合搅打均匀。
  • 10.然后挖一平勺奶酪霜。
  • 11.盖在小蛋糕表面,稍抹平抹圆,冷藏定型
  • 12.用巧克力豆沾上眼睛,白色巧克力沾上鼻子
  • 13.淡奶油加糖粉打发,装进裱花袋
  • 14.留出小绵羊脸部的位置,其他全都用裱花嘴嘴挤出小卷毛,最后装饰上羊角即可。
