立春的“立”表示开始,“春”表示季节,故立春有春之节气已开始之意。农谚有“春打六九头”、“几时霜降几时冬,四十五天就打春”之语。从冬至开始入九,“五九”四十五天,因而立春正好是“六九”的开始。在这一天起,一直到立夏的这段时间,一直都被我们称为“春天”。民间在立春这一天要吃一些春天的新鲜蔬菜,既为防病,又有迎接新春的意味。
这天最常见的食物就是春饼。春饼是用来卷菜吃的,菜包括熟菜和炒菜。荤的如酱肉、熏肘子、酱肘子、酱口条等,吃时切细丝或者薄片,再配几种家常炒菜如肉丝炒韭芽、肉丝炒菠菜、醋烹绿豆芽、素炒粉丝,摊鸡蛋等,荤素往饼里一卷,那叫一个香啊!
我把我做春饼的方法给各位露一小手,快手、薄而有韧性,两分钟烙两张,一点儿不吹牛!
面团要用开水,俗称烫面团,柔软而筋道,足足的裹上各种菜,您就甩开腮帮子吃吧!趁着年味儿正浓,赶快做起来吧!

Steps to make 【北京】春饼

  • 1.面粉入盆中,将滚开的水倒入盆中,用筷子搅拌成疙瘩状,没有干粉就成
  • 2.待手可以接受的温度时,揉成较光滑的面团,盖盖子饧15分钟
  • 3.再次将面团揉一揉,看,面团非常的滋润、光滑了;盖盖子再饧15分钟左右使用
  • 4.面团放在案板上,搓揉成长条,用刀切成双数,大小可随意,想吃大饼就大剂子,想吃小饼就小剂子
  • 5.剂子俩俩对应着码放好,在一块上面刷一层植物油
  • 6.将另一个面剂子扣在抹了油的剂子上
  • 7.取一对面剂子,先用手掌按扁,再用擀面杖从中心处向上一擀
  • 8.再从中心处向下一擀
  • 9.从中心处往左一擀
  • 10.从中心处往左一擀
  • 11.饼铛里无需抹油,中火加热之后,转成中小火或者小火,将一对面饼入锅中,不用盖盖子,不到一分钟,待底面有烙花儿出现,就翻个身烙另一面
  • 12.看,刚才的底面现在朝上了,有漂亮的烙花,同样待现在的底面出现烙花且饼子中间鼓起时,饼就烙好了
  • 13.将饼子一揭,瞧,两张就好了,连两分钟都没有
  • 14.又薄又柔软
  • 15.热吃凉吃都柔软而筋道
  • 16.裹上喜欢吃的菜,太香了
